Oktoberfest 2025 is coming to Clark Philippines and the beer festival will once again be the centerpiece of October’s celebration in Pampanga. Contrary to previous Oktoberfest celebrations, the celebration in this French restaurant in Clark Pampanga is not about drowning in cheap beers in a noisy ambiance. Instead, guests are treated to a fine meal of beer-based cuisine which is in every way as refined and appealing as a wine-paired dinner.

Only the legendary Vintage Beers are used in the cooking. Often referred to as Champagne Beers because of the fact that like their Champagne counterpart, these vintage beers are made to improve with age.

Vintage beers are triple fermented, the last fermentation taking place very slowly AFTER bottling, giving a matured, aged beer extraordinary complexity and depth of flavors not found in ordinary brews. At 12-13% alcohol levels, these beers are not to be trifled with, a gentle warning especially to beer drinkers who are accustomed to pouring beers down at great speed by the pints.

A little counter intuitive perhaps but it is not necessary to drink beer when enjoying these beer-based recipes. In fact, each dish will pair very well with a variety of fine wines.
